If you've been keeping up with my recent series, Project "Bikini Body Break Up" Part 1 & Part 2, you know that for the first two weeks of my vacation in Panama, I didn't exercise at all. Nada. But you can bet your still hanging string of Christmas lights that I continued to eat - and eat well ;)
Shortly after my coffee I felt my tummy rumbling, but couldn't stomach the idea of any meat or eggs (my normal breakfast go-tos). In accordance with Intuitive Eating, I asked myself what I was truly craving and came back with a giant bowl of mixed fruits - also incredibly delicious in Panama. There was a time where this bowl would trouble me - despite the healthy nature of the fruit. I would worry about not getting in enough protein for breakfast, wasting calories on too many carbs, etc. etc. I don't play by those mind games any more. Intuitive Eating really has saved me in more ways than one.
Before lunch time rolled around, I helped myself to this little piece of heaven. I'm a gal hooked on chocolate and I probably always will be. These little bars indulge my sweet tooth pretty well without giving me a crazy sugar rush.
I coated two corn tortillas in butter and cooked them in a pan until they got crispy. Then spread them with a generous amount of avocado, sliced tomato, honey and turkey. Topped them off with a squeeze of lime as well as some salt and pepper.
I was in the mood for a sweet sort of crunch shortly after lunch, so I opted for this mini bag of Cracker Jack. I've been on sort of a peanut kick lately, so the combo of the caramel-y popcorn & peanuts was super delicious. But that paper / not toy thing in every bag... Am I the only one who couldn't care less about that? Even when I was little I remember it just being an annoyance!
Around 4 PM I decided I felt like hitting the gym, so I snacked on a banana and a chugged a big glass of water before heading out. I rarely work out on an empty stomach back home, and I NEVER do it in Panama. The heat and humidity really make my body werk no matter if I'm doing cardio or weights, so I always have to have a little snack and a lot of water beforehand to keep from feeling light headed.
Made with gluten free macaroni, diced onions & peppers, two cans of tuna fish, & full fat mayo, this tuna fish pasta salad / casserole & homemade sweet potato fries is one of the best dinners we've made together.
As good as the warm, gooey, rich tuna pasta was, the fried sweet potatoes were even better. I'd never made sweet potato fries before (that didn't come out of a frozen bag) so this was a fun learning experience.
Normally, this is where I would post my fab, dessert of choice for the night. It's not like me to go to sleep without dessert, but I was so full from dinner and exhausted from the day that I totally konked out by like 9 PM.
