Today I'm bringing you a delicious(ly easy), heart healthy, sweet as sugar, banana bake. If you've ever made baked oatmeal, then you'll find this recipe very similar. Its crispy edges, fluffy center, flavor bursts of berry, and cinnamon accents make it the perfect breakfast, snack, lunch, or dinner. Ready to get bakin'? You'll need......
- 1 overly ripe (AKA brown) banana
- 1/3 tbsp chia seeds
- 1/2c gluten free or regular oats
- a pinch of baking powder
- as much cinnamon as you'd like
- 1/3c frozen berries
- 1/2c water
Prep time: 10 minutes
Bake time: 20 minutes
total time: 30 minutes
Begin by preheating the oven to 350 then follow the steps below
1) Bring out the banana
Yes I'm aware that this banana looks as if I left it in the back of my fridge for six months, but I SWEAR a brown/black banana is key for this recipe. Know why? Because underneath that dark peel is a a super ripe AKA incredibly sweet banana and trust me that's what you want for the base of this bake.
Now comes the fun part... |
2) Mash it Uuuup!
3) Add the oats, cinnamon, baking powder, chia seeds, water, & stir it all together
4) Fold in your frozen berries & pop it in the oven!
Make sure to use oven mitts when you remove your oven safe dish. Allow 1 - 2 minutes to cool and dig in!
