- Panamanian style breakfast dish with beans, rice, sausage, and some type of creole sauce
- a type of passion fruit I didn't care for
- AND a slice of banana bread which I loved
~lunch~
- Salmon & cheese tartlets - I'm not sure I fully tasted the creamed salmon, but these were to die for nonetheless. Crispy, flaky shell, warm cheese, smooth center. YUM
- roasted potatoes - just classicly delicious
- spaghetti in red sauce - the sauce was lighter than I'm used to, but the noodles were really thick and dense in a way I loved
- sliced turkey - not sure what it was about the deli meat here, but I was obsessed for my whole stay. I had some with almost every meal because it was just so fresh and simple
- green bean potato salad - hi mayo thanks for making the party just grand
- fried rice
- chicken breast
- grilled fish
- papaya
- carrots in a vinegar mixture
- spinach & potato puffs
- that aforementioned deli turkey of the gods
~dinner~
- tuna tartlets - yes they were just as good as the salmon ones
- mint roasted potatoes
- roasted chicken
- deli turkey
- chow mein
- fried rice
- eggplant hiding in the back
This pizza - double cheese, stuffed crust btw - is from the Italian restaurant which we went to on our last evening at the resort. And I also had a plate of spaghetti and bread with butter as an appetizer, because when a restaurant has a PASTA BAR for appetizers, you go with it.
~the takeaway~
- nobody's booty looks perfect 100% of the time in a bikini. They ride up. Get over it.
- I can go to a buffet for lunch, get really full, eat ice cream afterwards anyways, and still take off my cover-up and play in the pool with my little cousins. There's no law about showing a full belly.
- If you're going to pretend to be a gold-digger to get invited to a timeshare presentation offering a free two night stay for attendance, you better be convincing. Side note: I was. Side side note: that's why this is labeled part 1 because I'll be back at the end of the month ;)
- bread and butter before a carb heavy meal is okay
- In fact, carb heavy meals in general are OK even when grandma points out just how carb heavy it is. It's okay to laugh along with my cousins who are enjoying their carb heavy meals too
- I miss weight lifting on machines. The resort gym felt like an oasis to me. I made a vow to myself that I wouldn't join any high-end gyms during my summer in Panama City because I wanted to challenge my exercise addiction. I'm proud to say I have maintained that goal, but it still felt amazing to do lat pulls & leg extensions for the first time in awhile. I'll be happy when I can work out in my gym back home, not because I have to but because I want to.
- There is nothing more valuable or soul lightening than laughing and talking and just BEING with family. Nothing.
